Domaine Savary

The Domaine Savary winery is owned by two of the oldest families of winemakers of the Chablis wine region.
Coming from the village of Villy, Francine Savary brought a know-how that has been transmitted for over 200 years. With her heritage, she succeeded in seducing a young winemaker, Olivier Savary.
The other family, the Savary, coming from ... Maligny (village located close to Villy), also included many winemakers but the tradition briefly skipped a generation as Olivier's parents didn't want to run the business.
Proud of its heritage, the Domaine Savary now has a 20 hectares vineyard on the different crus of Chablis.
To manage this heritage, Francine and Olivier Savary had to build adapted facilities. That's why they have today a 1500 square meters building to house their facilities and their vat house.
The Domaine Savary strives to keep working in line with its heritage. They use meticulous techniques such as a sorting table and a gravity harvest reception to get high quality juices. see more
